"Wow" Them In Minutes


That's what the recipe stated in a magazine ad and that's what it delivered. Even I was "wow"ed the first time I made this. I hate cooking. I know I'm a stay at home mom and all, but I really do hate cooking. If I could hire a personal chef, I so would! Unfortunately, I am the personal chef for my family and well, it sucks. My husband often jokes about the times he comes home from work, ready to relax from the day and eat a great dinner with his fabulous family, only to walk in the door to find nothing on the stove and me looking at him like, "what? did you want me to make dinner?" Like it was going to magically appear from the food fairy or that I just didn't expect our family to eat that night. He's right and it's true.

I have my moments of putting forth an effort. Last night was one of them. We've been eating take out Chinese almost once a week from this great place close to our home. It's getting expensive. Granted the $18 for 2 combos will last us 2 meals, but it needs to stop.

This a great recipe to try for Sweet & Sour Chicken. It's easy and trust me that's #1 on my cooking demands! The recipe calls for pineapple chunks and pineapple juice but since I didn't have it on hand I left it out and we both thought it tasted better. So that can be optional.

Ingredients:
2 tbsp vegetable oil, 2 tbsp soy sauce, 1 cup sweet and sour sauce, 1 medium onion and 1 medium pepper (green, red, whatever) cut into chunks, mushrooms (I use canned), 20 oz canned pineapple chunks and 2 tbsp pineapple juice reserved, 1 lb chicken breast cut into 1" pieces, white Minute Rice.

Cook Minute Rice as suggested. Set aside.

In skillet, add veg oil on medium heat, add in onion, pepper, & mushrooms. Cook til crisp. Remove and set to the side.

In same skillet, add chicken. Cook thoroughly and until brown.



Add in remaining ingredients and cook until heated through. Serve over rice. Yumm-o!
